Ingredients

  • 1-1/2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 1 large egg
  • 1 cup + 2 tablespoons water
  • 3/4 cup breakfast sausage (or bacon), cooked and crumbled
  • maple syrup, to top 

Directions

  1. Preheat the oven to 350° Fahrenheit.
  2. Grease a 12-well muffin tin with cooking spray.
  3. Whisk together the power cakes mix, egg, and water in a mixing bowl until a smooth batter forms. Let rest for 5 minutes.
  4. Divide the batter evenly among the prepared muffin wells. Top each batter-filled well with 1 tablespoon of crumbled cooked sausage.
  5. Bake in the preheated oven for 12-15 minutes, or until just cooked through.
  6. Remove and let cool slightly. Serve muffins with a drizzle of maple syrup.
