Ingredients

  • 1-pound fresh chicken tenders 
  • 1 cup Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder 
  • 1/2 teaspoon onion powder
  • 1 large egg
  • 1 tablespoon olive oil
  • 6 Kodiak Buttermilk & Vanilla Thick and Fluffy Power Waffles
  • 3 tablespoons butter, cut into three pieces
  • 6 tablespoons Maple syrup 

Directions

  1. Place the Kodiak Power Cakes mix, salt, pepper, paprika, garlic powder, and onion powder in a shallow bowl and stir to combine well.
  2. Place the egg in a shallow bowl and beat well.
  3. Pat the chicken tenders dry with a paper towel.
  4. Working one tender at a time, coat with flour mixture, dip in the beaten egg, and place back in the flour mixture to coat. Place on a plate and repeat with the remaining chicken tenders.
  5. Heat an air fryer to 400 degrees Fahrenheit.
  6. Drizzle the breaded chicken tenders with the olive oil and place in the air fryer basket. Fry for 6-8 minutes or until a thermometer inserted in the center of a tender reads 165° Fahrenheit.
  7. While the chicken is cooking, toast the waffles in a toaster until golden brown.
  8. Serve the toasted waffles warm topped with a pat of butter, chicken tenders and a drizzle of maple syrup (~2 waffles + ⅓ of the chicken tenders, 1 tablespoon butter, and 2 tablespoons maple syrup).
