Introducing Pumpkin Pie Overnight Oats, a recipe straight from the Oatober harvest that you can prep the night before and enjoy a ready-to-eat breakfast come morning. Whether you prefer them hot or cold, each bowl delivers the same texture and delicious flavor you once may have worked all morning to create!
Ingredients
Oats Layer:
- 1/2 cup Kodiak Classic Rolled Oats Canister
- 1/2 cup milk of choice
- 2 tablespoons flax seeds
- 2 tablespoons pumpkin puree
- 1 tablespoon pure maple syrup
- 1/2 teaspoon vanilla
- Dash of pumpkin spice
- 1/4 teaspoon cinnamon
Chocolate Shell:
- 2 tablespoons chocolate chips
- 1 teaspoon coconut oil
Directions
- In a sealable jar or tuber ware, mix together Kodiak oats, milk, pumpkin spice, flax seeds, cinnamon, and maple syrup.
- Place in fridge and let sit for at least 30 minutes or overnight.
- In a small bowl, add the chocolate chips and coconut oil and microwave for 30 seconds. Stir, and microwave for another 15 seconds if needed. Pour the melted chocolate over the oats mixture, spread evenly over the top. Place in fridge or freezer for 5-10 minutes.
- Remove from fridge and enjoy!
