One of the things we love most about a big stack of flapjacks in the morning is the endless toppings and mix-ins to choose from. Over the last year, we’ve shared countless ingredient ideas with you as they’ve come and gone with each season, and we’re excited to close this series with four of our springtime favorites. Lemon & Poppy Seeds
Lemons and poppy seeds have been a popular pairing of sweet and sour flavors for as long as we can remember. Typically, poppies bloom in late spring and leave behind a bulky pod full of hundreds of black seeds once its petals begin to drop. These delicate seeds are edible, depending on the species of poppy, and add a sweet but subtle flavor to many popular recipes like these Lemon Poppyseed Flapjacks. All you need is one teaspoon of poppy seeds and just a little bit of lemon zest and juice to transform your morning stack of flapjacks. Bonus points if your poppyseeds come from your garden!
While maple syrup may be one of the most common flapjack and waffle toppings, nothing beats a good homemade fruit syrup; and strawberry season is just about here. As we head into prime strawberry season, you’ll want to add our recipe for Strawberry Syrup to your breakfast menu. Not only do strawberries have a sweet, delectable taste, but they are also packed with antioxidants. We suggest serving over a stack of flapjacks or waffles topped with a dollop of whipped cream and fresh, sliced strawberries. This recipe will keep in an airtight container inside the fridge for up to 7-10 days. Apricots & Almonds
Apricots are one of our favorite spring fruits because they are sweet, but not too sweet, and juicy, but not so juicy they make a mess. We’ve paired them with almond butter and our Carb Conscious Flapjack & Waffle Mix in this recipe for Apricot & Almond Flapjacks. In addition to the many health benefits of apricots, almond butter – especially freshly ground without the extra preservatives often found in jars – gives this recipe a boost of heart-healthy fats, fiber, and plant protein. Serve with a side of our Apricot Fruit syrup to really bring out the taste of spring in this dish!
Pineapple & Mango
Did you know that it takes up to two years to grow a pineapple? We don’t know about you, but we sure don’t want to miss out on this luxury fruit when it’s in season. So, we created this recipe for Mango Pineapple Flapjacks. Many consider mango and pineapple to be two of the most popular summer fruits but actually, their peak season is just beginning now. That means we don’t have to wait to indulge — and indulge we shall. This recipe is simple but delicious, all you need to do is cook up a plate of flapjacks over the stovetop or griddle and top with these fresh fruits! We like to add a drizzle of honey to enhance flavor even more.
