We love incorporating Kodiak Cakes into our recipes for simple, nutritious, and family-friendly dishes. From easy everyday eats to holiday favorites, getting everybody together in the kitchen is fun and easy to do — and that says a lot when two kids are involved. Here are four of our favorite festive fall recipes featuring our family’s favorite Kodiak Cakes staples!
Jalapeño Popper Cornbread Muffins
Total time: 40 mins | Makes 12 muffins
These delicious muffins pack fun and feisty all in one! Sweet and perfectly spicy cornbread filled with that classic cream center make these muffins an unforgettable fall favorite.
- 8 oz. cream cheese, light or regular, softened
- 1 cup shredded pepper jack cheese
- 1/2 teaspoon each, garlic and onion powder
- 2 tablespoons diced chives
- 1 box Kodiak Cakes Cornbread Mix
- 2 cups milk
- 2 eggs
- 1/2 cup butter, melted
- 1 large jalapeño, diced
- Preheat oven to 350°F
- In a small bowl, combine cream cheese, pepper jack, garlic and onion powders, and chives. Mix until well incorporated; set aside.
- Combine the cornbread mix, milk, eggs, and butter. Fold in diced jalapeños and stir until just combined.
- Spoon batter into a greased muffin pan. Before adding all of the batter to each tin, spoon in 1 tbsp of cheese mixture followed by a little more batter (you want just the very top of the cheese mixture to be exposed).
- Bake for 18-20 minutes, or until golden and set. Enjoy warm.
Pumpkin Pie Cheesecake Pops
Total time: 20 mins | Makes: approx. 8-10 popsicles (depending on mold)
Our family cannot get ENOUGH of these Pumpkin Pie Cheesecake Pops! They are cool, creamy, and utterly decadent with the perfect seasonal twist.
- 8 oz. cream cheese, softened
- 1/2 cup milk of choice
- 1/2 cup canned pumpkin puree
- 1/3-1/2 cup packed brown sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon pumpkin pie spice
- 1/8 teaspoon ground cinnamon
- 1 cup Kodiak Cakes Cinnamon Bear Bites, crushed
- Popsicle molds
- Add cream cheese, milk, pumpkin puree, brown sugar, vanilla, pumpkin pie spice, and cinnamon to a saucepan.
- Heat over lowest setting, whisking continuously, until sugar is dissolved and mixture is completely smooth. Add additional splashes of milk, as needed, to thin. Be careful not to overheat or scorch mixture.
- Taste and adjust seasonings per preference.
- Let cool slightly before carefully pouring mixture into freezer molds. Add crushed bites on top. Using a spoon or toothpick, gently push crumbles into mixture to create the pie “crust”.
- Freeze for 4-6 hours, or until completely frozen.
Pumpkin Chocolate Chip Muffin Skillet
Total time: 45 mins | Serves: 8 slices
Get the kids ready for Halloween with this festive muffin skillet. Filled with holiday spice and everything nice, this edible jack-o’-lantern is just as much fun to make as it is to eat. Skip the messy carving and opt for delicious chocolate glazing instead!
- 2 cups Kodiak Cakes Buttermilk Flapjack & Waffle Mix
- 3/4 cup softened butter
- 1 cup packed brown sugar
- 1 cup canned pumpkin puree
- 1 egg
- 2 teaspoon vanilla extract
- 2 teaspoon ground cinnamon*
- 1 teaspoon ground ginger*
- 1/8 teaspoon salt
- 1/3 cup chocolate chips, mini recommended
- Chocolate frosting, optional, for design
*Can substitute with 1-1/2 teaspoon Pumpkin Pie Spice, if desired
- Preheat oven to 350°F.
- In a mixing bowl, combine flour mix, spices, and salt. Stir to combined. In a separate bowl, whisk together butter, brown sugar, pumpkin puree, egg, and vanilla.
- Combine wet and dry ingredients and chocolate chips and fold together until just mixed.
- Pour mixture into a greased cast iron skillet.
- Bake for 28-30 minutes, or until set and slightly golden.
- Let cool completely.
- Using a piping bag, add “jack-o’-lantern” eyes, nose, and mouth.
Cold Brew Overnight Oats
Total time: 5 mins | Serves: 1 serving
After a long night of trick-or-treating and candy sorting, these overnight oats are just what mom and dad ordered. Creamy protein oats spiked with the smooth flavor of cold brew, they supply the java buzz we’re looking for!
- 1/2 cup Kodiak Cakes Protein Oats
- 1/3 cup preferred milk
- 1/4 cup cold brew coffee
- 1-1/2 teaspoons chia seeds
- 1/4 teaspoon vanilla extract
- 1-2 teaspoon brown sugar
Topping Ideas: cacao nibs, almond slices, and coconut flakes
- Add all ingredients to a mason jar and stir well to combine.
- Chill overnight or for at least 2 hours prior to eating.
