This is the year. This is the year that you set out on a culinary adventure in search of nutrient-dense holiday meals that everyone can enjoy. You may have mastered the recipe for balsamic glazed brussels sprouts and sweet potatos, and even cut the calories in your grandmother’s buttery mashed potatoes recipe in half; but the meal isn’t complete until you’ve overcome the often-overlooked treats that no one can resist during the holiday season. There are definitely easy ingredient swaps for your favorite pastries, though, so grab your apron and a mixing bowl — let’s bake a galette.

This French pastry is simple, classic, and versatile. Whether you opt for savory or sweet ingredients, a galette has the potential to be the star of your holiday dinner. The key behind ingredient swaps is to add fiber, and reduce calories and fat all while maintaining – or improving – flavor and texture. In this recipe, we’ve swapped all-purpose flour for Kodiak Cakes whole grain Buttermilk Power Cakes, which adds both fiber and flavor to the crust. Applesauce and yogurt are used in place of butter to cut down on calories and fat while still contributing to a tender and flavorful crust (Note: When swapping butter for applesauce, use a 1:1 ratio). Lastly, a few sugar free options in the filling and glaze help cut down the calories and offer a better-for-you-option for friends and family looking to manage their blood sugar.

Apple & Walnut Galette

Directions

  1. Preheat oven to 400F.
  2. In a large bowl, add Kodiak Cakes mix and work in cold, cubed butter and applesauce. Mix by hand until the texture is crumbly.
  3. In a smaller bowl, whisk together Greek yogurt, water, and lemon juice. Pour this over Kodiak Cakes mix and mix using hands or a wooden spoon until a dough is formed.
  4. Flatten the dough into a single layer, wrap in plastic, and refrigerate for 30 minutes to 1 hour.
  5. Prepare the filling by tossing together apples, brown sugar, flour, cinnamon, and nutmeg in a large bowl.
  6. On a well-floured surface, roll out the chilled dough and shape into a 12-inch circle and place on a lined baking sheet.
  7. Place the filling in the center if the dough and distribute evenly, making sure to leave a 2-inch border. Top with walnuts and fold in the edges gently over the filling, each fold over the next in pleat style.
  8. Brush the crust with egg wash and bake for 30-35 minutes. Apples should be tender and crust golden brown.
  9. For the topping, melt butter in a saucepan. Allow to brown slightly then add other ingredients. Remove from heat and pour over the galette. Top the galette with a scoop of H-E-B No Sugar Added Vanilla Ice Cream.
