Ingredients

Crust:

  • 2-1/2 cups Kodiak Cakes Buttermilk Power Cakes Flapjacks and Waffle mix
  • 1/2 teaspoon salt
  • 1 cup butter, cold and cut into cubes
  • 1/2 cup ice water

 

Filling:

  • 5 granny smith apples, peeled and sliced
  • 1/4 cup cane sugar
  • 1/4 cup brown sugar
  • 2 tablespoon flour
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 egg
  • 2 tablespoon raw sugar for topping

DIRECTIONS

  1. In a large bowl, combine Kodiak Cakes mix and salt
  2. Work the cold, cubed butter into the mix by hand until crumbly
  3. Mix in ice water until a dough is formed
  4. Flatten the dough into two even discs and refrigerate for 1 hour
  5. Meanwhile, combine the apples, sugar, flour, lemon juice, and spices
  6. On a floured surface, roll one disc of pie dough 1/4” thick
  7. Transfer the dough into a 9” pie pan and fill with the apple mixture
  8. Roll out the second disc of pie dough and cut into twelve even strips
  9. Form lattice by arranging 6 strips diagonally across the pie. Place the remaining 6 strips across the first strips
  10. Gently press the lattice ends against the crust edge
  11. Crack the egg into a small bowl and whisk
  12. Brush the egg over the pie dough and sprinkle lightly with raw sugar
  13. Bake pie at 425°F for 10 minutes
  14. Reduce temperature to 350° F and continue to bake for 1 hour or until juices begin to bubble and the crust is golden
