Ingredients

  • 1 tablespoon coconut oil
  • 1 cup of your favorite Kodiak Cakes Flapjack and Waffle Mix
  • 1 cup water
  • 1/2 small yellow onion
  • 1/2 red pepper
  • 1/2 cup canned black beans
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • 1 lime
  • 4 eggs
  • 1/2 cup small tomatoes
  • 1/4 cup feta cheese
  • 1 avocado
  • Cilantro sprigs
  • Favorite fresh salsa
  • Salt and pepper to taste

DIRECTIONS

Breakfast Tacos:

  1. Grease a griddle with half of the coconut oil.
  2. Mix Kodiak Cakes mix and water to a thin, smooth consistency.
  3. Spoon four large circles of pancake batter onto the griddle. Cook until edges begin to firm up, then flip and cook the other side until golden brown.
  4. In a small frying pan, add the remaining oil and sauté onions and peppers until soft. Add black beans and spices and the juice of one lime.
  5. Whip eggs with a little water, add to the pan and scramble with vegetables.
  6. To assemble: On top of each cooked pancake, add egg and veggie mixture, tomatoes, cheese, and chopped avocado. Garnish with cilantro and salsa.
