We had a little chat with the big guy in the red suit and, guess what? He's on the lookout for a Holiday Sugar Cookie that'll keep him going all night long. So, we took him up on the challenge and crafted this magical holiday sugar cookie using trusty whole grains and protein — shout out to our Buttermilk Power Cakes® mix. This recipe delivers all the sweet, classic flavor of your traditional favorites, but with a more satisfying, wholesome twist that'll make that old family recipe seem like a thing of the past.

Ingredients

For the cookies:

  • 1 cup butter, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 3 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix

 

For the frosting:

  • 1 cup butter, softened
  • 6-8 cups confectioners sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk

Directions

To make the cookies:

  1. Preheat the oven to 350° F. Line a baking sheet with parchment paper.
  2. Place the butter and sugar in a mixing bowl. Cream together with an electric mixer until light and fluffy.
  3. Add the egg, almond extract, and sour cream and beat in until smooth, scraping down the sides once.
  4. Add the Kodiak mix to the wet ingredients and mix in until just combined.
  5. Place the dough between 2 sheets of waxed paper, dusting both sides with flour, and roll out to a thickness of no less than ½". Refrigerate the dough for 30 minutes.
  6. Remove dough from refrigerator. Peel back the top sheet of parchment and cut shapes out of the dough using desired cookie cutters. Place cookies 1" apart on the parchment-lined baking sheet.
  7. Bake in preheated oven for 10-12 minutes. Do not let them brown!*
  8. Cool cookies on a wire rack.

*Kodiak Tip: Cook for the shortest amount of time possible, so that they almost seem underdone. Once cooled, they’ll be so soft. Just take care not to under-cook. Everyone's oven is a little different, so see what time works best to give you the results you want.

 

To make the frosting:

  1. Place the butter, sugar, and vanilla in a mixing bowl and beat on low speed with an electric mixer until combined. Increase speed to high and continue to beat for another 2-3 minutes or until light and fluffy. Add a little milk to thin, if needed.
  2. Use a butter knife to spread frosting on the cooled cookies.
  3. Decorate with desired toppings.
  4. Store cookies in an airtight container.
