S’mores Pudding Pie

No need for skewers or sticks, an open flame, or sticky fingers but still plenty of melted chocolate, crispy marshmallows, and crunchy graham crackers. It’s a Kodiak Cakes’ spin on a childhood favorite that big and little bears will both love.

Ingredients

Crust:

  • 3 cups Kodiak Cakes Honey Bear Bites, crushed
  • 1/2 cup butter, melted
  • 1/4 cup sugar

Filling:

  • 2 cups semisweet or dark chocolate chips
  • 1/2 cup sugar
  • 1/3 cup cornstarch
  • 2 tablespoon cocoa powder
  • 1/2 teaspoon salt
  • 4 egg yolks
  • 3 cups milk
  • 2 tablespoon butter
  • 1 tablespoon vanilla

DIRECTIONS

  1. Preheat oven to 350° F
  2. In a large bowl mix the crushed Honey Bear Bites, melted butter, and sugar until combined
  3. Press the mixture into a 9” pie pan
  4. Bake for 8-10 minutes or until golden. Let cool
  5. In a large saucepan, stir the sugar, cornstarch, cocoa powder and salt
  6. In a large measuring cup, whisk the egg yolks and milk together. Gradually whisk into the sugar mixture
  7. Place the saucepan over medium-low heat until the mixture comes to a boil. Let boil for 1 minute, stirring constantly
  8. Remove from heat and stir in butter and vanilla
  9. Stir in chocolate pieces until fully combined and melted
  10. Pour pudding into pre-baked pie crust
  11. Place in refrigerator for 4-5 hours to chill before serving
