  • 1 cup stevia or sweetener of choice
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 cup white chocolate chips
  • 3/4 cup chopped macadamia nuts
  • 1 cup softened butter
  • 2 large whole eggs
  • 2-1/4 cups Kodiak Cakes All Purpose Baking Mix
  • 1/2 teaspoon baking soda


  1. Preheat over to 375 degrees F. and line two large baking sheets with parchment paper
  2. In a medium size bowl, whisk together Kodiak Cakes mix, baking soda and salt then set aside
  3. In a large bowl or stand mixer combine sweetener, vanilla extract and butter. Mix on medium until light and fluffy for about 2 minutes. Add eggs one at a time and beat for about 30 seconds. Slowly fold in the flour mixture slowly until the flour begins to disappear. Fold in white chocolate chips and macadamia nuts
  4. Portion and divide cookie dough onto baking sheets. Bake for 11-14 minutes, or until golden brown at the edges but soft in the middle. Let cookies cool for 5 minutes on baking sheet before transferring to a wire rack to cool completely
