Ingredients
- 1 Box Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 1/2 teaspoon salt
- 3 eggs
- 1-1/2 cup Greek yogurt
- Juice and zest of two medium oranges
- 1/4 cup real maple syrup
- 1-1/2 teaspoons vanilla
- 1-1/4 cup whole milk
- 1 cup dried cranberries
Directions
- Preheat oven to 350°F and line a muffin tin with liners or grease well.
- In a large bowl, whisk together eggs, Greek yogurt, orange juice and zest, maple syrup, vanilla, and milk until smooth.
- Add Kodiak mix and salt; stir until just combined. Fold in the dried cranberries.
- Divide batter evenly into 24 muffin tins, filling each about ¾ full.
- Bake for 16-21 minutes, or until the tops are set and a toothpick inserted in the center comes out clean.
- Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Reheat Instructions: From the fridge, reheat in a 350° F oven or toaster oven for 6–10 minutes until warmed through.
