Ingredients
- 1/2 cup avocado oil
- 1/2 cup dark brown sugar, gently packed
- 1/4 cup sugar
- 1 cup pumpkin purée
- 1 teaspoon vanilla
- 1 egg
- 2 cups Kodiak Pumpkin Power Cakes Flapjack & Waffle Mix
- 1-1/2 teaspoons baking soda
- 1/2 cup Kodiak Classic Rolled Oats Oatmeal Canister
- 1 cup chocolate chips
Directions
- Preheat the oven to 350° F. Line a baking sheet with parchment paper.
- Place the avocado oil, brown sugar, sugar, pumpkin purée, vanilla, and egg in a mixing bowl and whisk together until smooth.
- In a separate bowl, whisk together the Kodiak mix, baking soda, and Kodiak oats.
- Add the dry ingredients to the wet mixture and beat together to form a smooth batter.
- Add the chocolate chips and fold in evenly.
- Let sit for 5 minutes.
- Scoop ¼ cup mounds of dough onto the prepared baking sheet (a large cookie scoop works well for this), spaced 3 inches apart.
- Bake in the preheated oven for 16-18 minutes, until fully cooked.
- Remove from the oven and cool on a wire rack.
- Store in an airtight container.
