Ingredients
- 1 cup full-fat cottage cheese
- 1 cup shredded mozzarella cheese
- 1 cup Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix, plus extra for dusting
Topping:
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded Parmesan cheese
Garlic Butter:
- 3 tablespoons butter, melted
- 2 cloves garlic, finely chopped
- 2 tablespoons fresh parsley, finely chopped
Directions
- Preheat the oven to 375° F. Line a baking sheet with parchment paper.
- Place the cottage cheese, shredded mozzarella cheese, and Kodiak mix in a large bowl. Using a pastry cutter, cut the mozzarella into the mixture until a cohesive dough forms.
- Divide the dough into 9 equal portions. Lightly dust each portion with additional Kodiak mix and roll into logs about 6-inches long.
- Arrange the breadsticks on the prepared baking sheet, leaving approximately 1/4 inch between each breadstick.
- Evenly top the breadsticks with 1 cup shredded mozzarella cheese and 1/2 cup shredded Parmesan cheese.
- Bake for 18–22 minutes, or until the breadsticks are cooked through and the cheese is melted, bubbling, and golden brown.
- While the breadsticks bake, stir together the melted butter, chopped garlic, and chopped parsley.
- Remove the breadsticks from the oven and immediately brush generously with the garlic butter mixture. Serve warm.
