A pumpkin muffin is always a good idea, but a cheesecake layer takes your seasonal favorite to another dimension. This single-serve pumpkin cheesecake muffin has honey-sweetened cream cheese swirled right into a Kodiak Pumpkin Chocolate Chip Muffin Cup, along with pumpkin purée and an egg for 23 grams of protein and 7 grams of fiber per serving.
It takes five minutes to put together and 90 seconds in the microwave, and there's only one small bowl to wash. Made for one, because some things you just don't split.

Ingredients
- 1 Kodiak Pumpkin Chocolate Chip Muffin Cup
- 1/4 cup pumpkin purée
- 1 egg
- 3 tablespoons milk
- 2 tablespoons cream cheese, room temperature
- 1 teaspoon honey
- 1/4 teaspoon vanilla extract
Directions
- Remove the lid from the Kodiak muffin cup.
- Add the pumpkin purée, egg, and milk to the cup and stir until a smooth batter forms. Set aside.
- Place the cream cheese in a small bowl and whisk until smooth. Add the honey and vanilla and whisk again until combined and smooth.
- Spoon the cream cheese mixture on top of the pumpkin muffin batter and swirl with a toothpick.
- Microwave on high for 90 seconds.
- Cool slightly and enjoy!
*Baking Tip: No microwave? No problem! Make your muffin according to above directions, place directly on the backing rack or on a baking sheet, and bake in a preheated oven set to 375°F for 25-30 minutes.
