Ingredients
- 12 Medjool dates, pits removed
- 2/3 cup almond butter
- 2/3 cup shredded coconut, divided
- 1/2 cup water
- 1 box Kodiak Oatmeal Chocolate Chip Protein Balls
- 1/4 cup Dark Chocolate Chips
Directions
- Place the dates, almond butter, and ⅓ cup shredded coconut in the bowl of a food processor. Process until dates are broken down and a chunky paste forms.
- Add the protein ball mix and water to the food processor and process until the mixture resembles cookie dough, scraping down the sides as needed.
- Let the dough rest for 5 minutes for liquids to absorb.
- Roll the mixture into 24 balls, about a heaping tablespoon in volume, each. Roll each ball in the remaining shredded coconut and place on a tray lined with parchment paper.
- Place the chocolate chips in a microwave safe bowl and heat at 30 second intervals until melted. Stir until smooth.
- Drizzle the melted chocolate over the tops of the protein balls. Let the chocolate set before storing.
- Store in an airtight container in the refrigerator.
