Ingredients

  • 12 Medjool dates, pits removed 
  • 2/3 cup almond butter
  • 2/3 cup shredded coconut, divided 
  • 1/2 cup water
  • 1 box Kodiak Oatmeal Chocolate Chip Protein Balls
  • 1/4 cup Dark Chocolate Chips

Directions

  1. Place the dates, almond butter, and ⅓ cup shredded coconut in the bowl of a food processor. Process until dates are broken down and a chunky paste forms.
  2. Add the protein ball mix and water to the food processor and process until the mixture resembles cookie dough, scraping down the sides as needed.
  3. Let the dough rest for 5 minutes for liquids to absorb.
  4. Roll the mixture into 24 balls, about a heaping tablespoon in volume, each. Roll each ball in the remaining shredded coconut and place on a tray lined with parchment paper.
  5. Place the chocolate chips in a microwave safe bowl and heat at 30 second intervals until melted. Stir until smooth.
  6. Drizzle the melted chocolate over the tops of the protein balls. Let the chocolate set before storing.
  7. Store in an airtight container in the refrigerator.
