This recipe has become a family favorite in her home, where even her 5-year-old leaves no crumb behind. It’s a weekend staple (and sometimes on busy weekdays too).
Each stack packs 14g of protein per serving and a hearty, wholesome flavor you can feel good about. Topped with warm cinnamon-spiced apple compote, a dollop of creamy Greek yogurt, and a drizzle of maple syrup, these pancakes taste like you’re going to be wishing for a second stack.

Ingredients
- 1 cup Buttermilk Power Cakes Flapjack & Waffle Mix
- 3/4 cup water, or milk
- 4 tablespoons of Butter
- One large apple, chopped
- 1 teaspoon cinnamon
- 1/2 cup sugar, or sugar replacement
- ~ 1 cup Greek yogurt
- ~ 4 tablespoons maple syrup
Directions
- In a medium-sized mixing bowl, combine the Kodiak mix and water to make a smooth batter.
- Melt the butter in a skillet over medium heat. Add the apples, cinnamon, and sugar, and cook until the apples are tender. Set aside. (Pro tip: make extra ahead of time to have all week!)
- Cook pancakes per the package instructions. Top them with a dollop of Greek Yogurt, apple compote, and drizzle with maple syrup. Enjoy!
