Ingredients

  • 1 cup Buttermilk Power Cakes Flapjack & Waffle Mix 
  • 3/4 cup water, or milk 
  • 4 tablespoons of Butter 
  • One large apple, chopped 
  • 1 teaspoon cinnamon 
  • 1/2 cup sugar, or sugar replacement 
  • ~ 1 cup Greek yogurt 
  • ~ 4 tablespoons maple syrup 

Directions

  1. In a medium-sized mixing bowl, combine the Kodiak mix and water to make a smooth batter. 
  2. Melt the butter in a skillet over medium heat. Add the apples, cinnamon, and sugar, and cook until the apples are tender. Set aside. (Pro tip: make extra ahead of time to have all week!) 
  3. Cook pancakes per the package instructions. Top them with a dollop of Greek Yogurt, apple compote, and drizzle with maple syrup. Enjoy!
