Ingredients
Apple Cinnamon Compote
• 1-1/2 pounds apples
• 1-1/4 cup water
• 1 tablespoon brown sugar
• 1/2 cup plus 1 tablespoon honey
• 1 teaspoon cinnamon
• 1 tablespoon lemon juice
Buttermilk & Honey Flapjacks
• 2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
• 1 1/2 cup water
• 4 teaspoons honey
• 1 teaspoon cinnamon
• 4 tablespoons unsalted butter
• Maple syrup, for serving (optional)
Directions
Apple Cinnamon Compote
- Peel and core apples then cut them into eighths.
- Place them in a shallow wide saucepan with ¼ cup of water, brown sugar, 1 tablespoon of honey, and cinnamon over medium heat.
- Bring to a boil then reduce heat to low. Simmer and stir until apples are soft and fragrant (about 10 minutes).
- Add the remaining 1 cup of water and ½ cup of honey, raise to medium heat, and stir to combine.
- Bring mixture to a boil and continue cooking for 20-25 minutes or until the apples have turned golden and syrup has thickened.
- Stir in the lemon juice.
Buttermilk & Honey Flapjacks
- Combine Kodiak Cakes Buttermilk Power Cakes Mix, water, honey, and cinnamon.
- Heat a griddle or skillet over medium-high heat with ½ tablespoon of butter.
- Add ¼ cup of the flapjack batter to the skillet and cook until bubbles form on top and the bottom is golden. Then flip and cook on the other side until golden.
- Set aside the cooked flapjacks and add another ½ tablespoon of butter to the skillet.
- Once the skillet is hot, add another ¼ cup of the flapjack batter to the pan and repeat process until you’ve made 8 flapjacks (using all the batter).
- Serve the flapjacks with apple compote on tip, and maple syrup for drizzling.
