Ingredients
- 1/4 cup olive oil
- 1 small red onion, sliced
- 12 asparagus stalks, bottoms trimmed
- 10 large eggs
- 3 tablespoons Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon cracked black pepper
- 1 tablespoon fresh chives, chopped
- 1/4 cup goat cheese crumbles
Directions
- Preheat the oven to 350° F and coat a standard pie dish with butter or baking spray.
- In a pan over medium heat, sauté the red onion in the olive oil until soft, then remove from heat.
- In the same pan, sauté the asparagus over medium heat for about 2 minutes, until bright green, then remove from heat.
- Place the sautéed onions and asparagus into the prepared baking dish and spread evenly.
- Add the eggs, Kodiak mix, baking powder, salt, pepper, and chives to a blender and blend on low until smooth.
- Pour the egg mixture over the vegetables and sprinkle the goat cheese evenly over the top.
- Bake for 35–40 minutes, or until the center is set and cooked through.
