Recipe provided by Kitchen McCabe
Ingredients
- 2 Kodiak Berries & Cream Peak Oatmeal Packets
- 1 egg
- 2 tablespoons butter, melted
- 1 tablespoon maple syrup
- 2/3 cup whole milk
- 1/4 cup berries (blueberries, raspberries, blackberries), to top
Directions
- Preheat the oven to 350° F. Line a loaf pan with parchment paper.
- Place the contents of the oatmeal packets in a high-speed blender along with the egg, butter, maple syrup, and milk
- Pulse several times to break up the oats a bit. Let the batter rest for 10 minutes.
- Spoon the batter evenly into the parchment lined loaf pan.
- Place the berries evenly over the top of the oat mixture, breaking them into halves if they are large.
- Bake for 15-18 minutes or until golden brown and cooked through.
- Let cool completely. Remove from pan and cut into 6 slices.
- Store in an airtight container.
*Pro Tip: This recipe can be doubled and baked in an 8x8" or 9x9" baking pan to make 12 servings.
