Ingredients
- 2 cups strawberries, stems removed, quartered
- 2 tablespoons honey
- 1/2 teaspoon vanilla extract
- Juice of half a lemon
- 1/2 cup plain or vanilla Greek yogurt
- 1/2 cup Kodiak Honey Oat Granola
Directions
- Preheat the oven to 350° F.
- Place the strawberries, honey, vanilla, and lemon juice in a 9x13” baking dish and toss to combine.
- Bake in the preheated oven for 30 minutes, or until berries have released their juices and are deep red in color.
- Let cool completely. The juices will thicken to a syrup texture.
- To make a parfait, layer the yogurt, Kodiak granola, and roasted strawberries with syrup in small glass containers in desired volume.
- Cover and refrigerate any remaining strawberries in syrup.
