Ingredients
Fiber Brownies:
- 2 cups Kodiak Dark Chocolate Power Cakes Flapjack & Waffle Mix
- 3/4 cup granulated sugar
- 1 (15 ounce) can black beans, rinsed and drained
- 2 large eggs
- 1/2 cup butter, melted
- 2 tablespoons vegetable oil
- 1/2 cup milk
- 1 teaspoon vanilla extract
Breakfast Brownie Parfaits:
- 4 cups vanilla Greek yogurt
- 4 cups Fiber Brownie cubes
- 2 cups Kodiak Chocolate Granola
- 1-2 cups fresh blackberries, raspberries, strawberries, or blueberries, optional
Directions
- Preheat the oven to 350°F. Grease a 9 x 9-inch baking pan.
- Add the black beans, eggs, melted butter, vegetable oil, milk, and vanilla to a blender. Blend until completely smooth.
- Place the Kodiak Dark Chocolate Power Cakes mix and sugar in a large mixing bowl. Whisk together to combine.
- Pour the blended black bean mixture into the dry ingredients and whisk until a smooth batter forms.
- Spread the batter evenly into the prepared baking pan.
- Bake for 25-30 minutes, or until the center is set and a toothpick inserted into the center comes out with a few moist crumbs. Cool completely.
- Cut the cooled brownies into 1-inch cubes.
- To assemble the parfaits, layer vanilla Greek yogurt, Fiber Brownie cubes, and Kodiak Chocolate Granola in individual glasses or jars.
- Repeat the layers as desired and finish with brownie cubes and a sprinkle of granola. 10. Top with fresh berries or other fruit, if desired. Serve immediately.
