Ingredients
- 6 Kodiak Homestyle Power Waffles
- 1-1/2 cups shredded chicken
- 1/2 cup buffalo sauce
- 1-1/2 cup shredded mozzarella cheese
- 1/4 cup thinly sliced red onion
- 1 tablespoon fresh parsley, chopped
For the ranch dressing:
- 1/2 cup plain Greek yogurt
- 1/2 teaspoon dried dill
- 1/2 teaspoon dried parsley
- 1/4 teaspoon dried chives
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 1/2 teaspoon fresh lemon juice
- 1-2 tablespoons milk
Directions
- Preheat the oven to broil on high. Line a baking sheet with parchment paper.
- Toast the Kodiak waffles in a toaster until golden brown and place on the prepared baking sheet, spacing each waffle 2-inches apart.
- Add the chicken and buffalo sauce to a small mixing bowl and toss until the chicken is well coated with the sauce.
- Top each waffle with 1/4 cup of the shredded chicken mixture, spreading evenly across each waffle.
- Next, top each waffle with 1/4 cup of the shredded cheese, evenly spreading over the waffle and chicken mixture.
- Broil for 4-5 minutes in the preheated oven, or until cheese is bubbling and lightly golden brown on top.
- Remove the pizzas.
- Sprinkle the sliced red onion evenly over the pizzas, along with the chopped parsley.
- Drizzle the pizzas with the ranch dressing, or serve on the side to dip.
For the ranch dressing:
- Add the Greek yogurt, dill, parsley, chives, garlic powder, onion powder, salt, pepper, and lemon juice to a small bowl.
- Stir until well combined.
- Add 1 tablespoon of milk and stir until smooth. Add a little more as needed to reach your desired dressing consistency.
- Use immediately or refrigerate for 20-30 minutes to allow the flavors to develop.
