Ingredients
- 3/4 cup butter (6 tablespoons), softened
- 1 cup brown sugar
- 1 egg
- 1-1/2 teaspoon vanilla extract
- 1-1/2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 1 cup Kodiak Classic Rolled Oats Canister
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup white chocolate chips*
Directions
- Preheat the oven to 350° F and line a baking sheet with parchment paper.
- Place the butter and brown sugar in a mixing bowl and beat with an electric mixer until light and fluffy, 2-3 minutes.
- Add the egg and vanilla and beat in until combined.
- In a separate bowl, whisk together the power cakes mix, rolled oats, cinnamon, cardamom, cloves, ginger, and nutmeg.
- Add the dry ingredients to the wet ingredients and beat in until a thick dough forms. Fold in the white chocolate chips
- Scoop balls of dough about 3 tablespoons in volume and place 2 inches apart on the prepared baking sheet.
- Bake in the preheated oven for 8-10 minutes, or until golden brown on the edges. Remove and let cool for 5 minutes before moving to a wire rack.
- Store in an airtight container.
*Pro Tip: Mix it up by subbing out white chocolate chips for raisins, nuts, etc.
