Ingredients

  • 1 box Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix​
  • 1-1/2  cup cornmeal​
  • 2 teaspoons baking powder​
  • 1 teaspoon salt​
  • 1 cup cottage cheese
  • 1-1/4 cup whole milk​
  • 1-1/4 cup apple sauce​
  • 3 eggs​
  • 1/4 cup melted butter​
  • 1/3 cup honey

Directions

  1. Preheat oven to 375°F and grease or line muffin tins.​
  2. In a blender, combine cottage cheese, eggs, applesauce, milk, honey, and melted butter. Blend until completely smooth.​
  3. In a large bowl, whisk together Kodiak mix, cornmeal, baking powder, and salt. Pour in the blended wet ingredients and stir until just combined.​
  4. Let batter rest for 5 minutes, then divide evenly into 24 muffin cups. Depending on the size of your muffin tins, you may need to bake in batches.​
  5. Bake for 16–21 minutes, until set and lightly golden. Let cool slightly before serving.
  6. Store in an airtight container in the refrigerator for up to 4-5 days.​

 

Reheat Instructions: From the fridge, reheat in 350°F oven for 6-10 minutes until warmed through.​
