Ingredients

  • 4 medium boneless skinless chicken breasts
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 1 teaspoon Italian seasoning
  • 3 tablespoons extra-virgin olive oil, divided
  • 1 small onion, diced (about 1/3 cup)
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, thinly sliced
  • 3 cups baby spinach
  • 2 tablespoons Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix

 

Sauce:

  • 1-1/4 cups heavy cream
  • 1/4 cup freshly grated parmesan, plus more for serving
  • 1 teaspoon Italian seasoning
  • Salt & pepper to taste

Directions

  1. Prepare the chicken. Place each chicken breast between parchment or plastic wrap and pound to an even thickness.
  2. Season the chicken. Season both sides with salt, pepper, and Italian seasoning.
  3. Sear the chicken. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Sear 3–4 minutes per side until golden. Transfer to a plate.
  4. Add remaining oil to skillet. Add onion and sauté 2–3 minutes. Add garlic and sun-dried tomatoes and cook 1 minute.
  5. Sprinkle Kodiak mix over vegetables and stir 30–45 seconds.
  6. Add heavy cream, parmesan, and Italian seasoning. Stir and simmer 1 minute.
  7. Stir in spinach and cook until wilted, 1–2 minutes.
  8. Return chicken into sauce, reduce heat, and cook 5–6 minutes until cooked through.
  9. Spoon sauce over chicken and serve immediately.
