Ingredients
- 4 medium boneless skinless chicken breasts
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground pepper
- 1 teaspoon Italian seasoning
- 3 tablespoons extra-virgin olive oil, divided
- 1 small onion, diced (about 1/3 cup)
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, thinly sliced
- 3 cups baby spinach
- 2 tablespoons Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
Sauce:
- 1-1/4 cups heavy cream
- 1/4 cup freshly grated parmesan, plus more for serving
- 1 teaspoon Italian seasoning
- Salt & pepper to taste
Directions
- Prepare the chicken. Place each chicken breast between parchment or plastic wrap and pound to an even thickness.
- Season the chicken. Season both sides with salt, pepper, and Italian seasoning.
- Sear the chicken. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Sear 3–4 minutes per side until golden. Transfer to a plate.
- Add remaining oil to skillet. Add onion and sauté 2–3 minutes. Add garlic and sun-dried tomatoes and cook 1 minute.
- Sprinkle Kodiak mix over vegetables and stir 30–45 seconds.
- Add heavy cream, parmesan, and Italian seasoning. Stir and simmer 1 minute.
- Stir in spinach and cook until wilted, 1–2 minutes.
- Return chicken into sauce, reduce heat, and cook 5–6 minutes until cooked through.
- Spoon sauce over chicken and serve immediately.
