Ingredients

  • 1/2 crushed Weetabix biscuit (or crushed bran flakes) 
  • 3-5 pitted chopped cherries 
  • 1 chopped date 
  • 1/3 cup Dark Chocolate Power Cakes Flapjack & Waffle Mix 
  • 1/4 cup liquid (milk or water works!) 
  • Cinnamon (measure with your heart) 
  • 1 Tablespoon all natural peanut butter (optional) 

Directions

  1. Add your pancake mix and crushed fiber cereal of choice (I used 1/2 of a Weetabix biscuit!) to a bowl 
  2. Add about 1/4 cup of your liquid. You may need to add more depending on the consistency you want! 
  3. Mix in your peanut butter for some healthy fat (totally optional) 
  4. Sprinkle and mix in some cinnamon (optional) 
  5. Fold in your chopped date and cherries! 
  6. Drop about a heaping spoonful onto a heated pan, letting each side cook for 3(ish) and enjoy your delicious pancakes! 

 

*Note: Makes about 4-5 medium sized pancakes. Jessica suggests topping your stack with a drizzle of honey, yogurt, and fresh berries!
