Looking for a way to use those delicious summer peaches you bought at the local fruit stand? Nothing brings out the sweet natural sugars of a fresh peach like this recipe for grilled peaches and granola. Enjoy this combo as prepared for a refreshing treat after dinner, or substitute Greek yogurt for ice-cream to make a protein-packed breakfast that will keep you full until lunchtime.
Ingredients
- 2 cups oats
- 1/4 cup Kodiak Cakes Cinnamon Oat Power Cakes Mix
- 1/2 cup nuts, seeds, or coconut flakes
- 1/4 cup maple syrup
- 1/4 cup oil
- 1/2 teaspoon cinnamon
- 4 peaches, pitted and cut in half
- 1/4 cup maple syrup
- 2 cups vanilla ice cream
Directions
- Preheat oven to 350 degrees.
- Mix all ingredients in a large bowl until combined. Spread granola evenly on a lined baking sheet.
- Bake for 15 minutes, stir, then bake an additional 10-15 minutes or until crispy and golden.
- Brush maple syrup on the inside of the peaches and place on the grill until the peaches caramelize and grill marks form.
- Divide grilled peaches, ice cream, and granola into 4 bowls and serve.
