Looking for a way to use those delicious summer peaches you bought at the local fruit stand? Nothing brings out the sweet natural sugars of a fresh peach like this recipe for grilled peaches and granola. Enjoy this combo as prepared for a refreshing treat after dinner, or substitute Greek yogurt for ice-cream to make a protein-packed breakfast that will keep you full until lunchtime.

Ingredients

  • 2 cups oats
  • 1/4 cup Kodiak Cakes Cinnamon Oat Power Cakes Mix
  • 1/2 cup nuts, seeds, or coconut flakes
  • 1/4 cup maple syrup
  • 1/4 cup oil
  • 1/2 teaspoon cinnamon
  • 4 peaches, pitted and cut in half
  • 1/4 cup maple syrup
  • 2 cups vanilla ice cream

Directions

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients in a large bowl until combined. Spread granola evenly on a lined baking sheet.
  3. Bake for 15 minutes, stir, then bake an additional 10-15 minutes or until crispy and golden.
  4. Brush maple syrup on the inside of the peaches and place on the grill until the peaches caramelize and grill marks form.
  5. Divide grilled peaches, ice cream, and granola into 4 bowls and serve.
