Add a little heat to your morning with this hearty Hot Honey Chicken and Waffle Casserole. Made using Kodiak® Buttermilk Power Waffles®, this recipe packs in whole grain greatness, a whopping 26g of protein per serving, and a hint of delicious, sweet heat with every bite for a crave-worthy dish perfect for your next weekend brunch.

Ingredients
- 6 Kodiak Buttermilk & Vanilla Power Waffles, thawed
- 1 cup chicken, precooked and shredded or cubed(rotisserie chicken is great for this)
- 6 large eggs
- 1 cup cheddar cheese, shredded
- 2 cup whole milk
- 1/2 teaspoon salt
- 1 small red or green jalapeño
- 1/4 cup honey
- 3 green onions, sliced
Directions
- Preheat the oven to 375 degrees. Grease a 9x9” baking pan.
- Cut the waffles into 1” cubes. Add the the baking pan along with the chicken, tossing both together and dispersing evenly through pan.
- Place the eggs, cheese, milk, and salt in a mixing bowl and whisk together until well combined. Pour evenly over the waffle mixture.
- Let sit for 10 minutes.
- Bake in the preheated oven for 20-25 minutes, or until golden brown on top.
- While the casserole is baking, remove seeds from the jalapeño and finely dice. Add to a bowl with the honey and mix together.
- After removing the casserole from the oven, drizzle the hot honey over the top and sprinkle with green onion.
- Serve warm.
