Ingredients

  • 1 stick (1/2 cup) butter, room temperature
  • 1/4 cup packed brown sugar
  • 1/2 cup molasses 
  • 2 large eggs
  • 1 teaspoon vanilla extract 
  • 2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 2 teaspoons ground ginger 
  • 1/2 teaspoon ground nutmeg 
  • 1/4 teaspoon ground cloves 
  • 1 cup buttermilk 

Directions

  1. Preheat the oven to 350° F. Grease and flour the sides of a 9x5” loaf pan (or line with parchment paper).
  2. Place the butter in a large mixing bowl along with the brown sugar. Beat for 30 seconds, until well combined.
  3. Beat in the molasses. 
  4. Beat in the eggs, one at a time, thoroughly mixing in after each addition. 
  5. Beat in the vanilla.
  6. Add the Kodiak mix, ginger, nutmeg, and cloves to a separate mixing bowl and whisk to combine.
  7. Add 1/2 of the dry ingredients to the bowl of wet ingredients and beat just until combined.
  8. Beat in 1/2 of the buttermilk. Add the remaining flour mixture to the mix and beat in until just combined. Then, beat in the remaining buttermilk just until a smooth batter forms.
  9. Let the batter rest for 5 minutes. 
  10. Spoon the batter into the prepared loaf pan, mounding the batter higher in the center.
  11. Bake the loaf in the preheated oven for 45-50 minutes, or until cracked on top and cooked through.
  12. Remove from oven and let cool completely before removing from the pan.
  13. Place the loaf on a wire rack and dust with powdered sugar.
  14. Slice and serve. Store in an airtight container.
