Made using Kodiak Buttermilk Power Cakes, this holiday bake comes out merrily moist and tender, with warm spices that hit in all the right places — ginger forward, a little nutmeg, a hint of clove, and that rich molasses flavor to tie it all together. Bake a loaf to share with friends, neighbors, or anyone on your nice list. Each slice is filled with a hearty serving of whole grains, protein, and holiday cheer.

Ingredients
- 1 stick (1/2 cup) butter, room temperature
- 1/4 cup packed brown sugar
- 1/2 cup molasses
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 2 teaspoons ground ginger
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup buttermilk
Directions
- Preheat the oven to 350° F. Grease and flour the sides of a 9x5” loaf pan (or line with parchment paper).
- Place the butter in a large mixing bowl along with the brown sugar. Beat for 30 seconds, until well combined.
- Beat in the molasses.
- Beat in the eggs, one at a time, thoroughly mixing in after each addition.
- Beat in the vanilla.
- Add the Kodiak mix, ginger, nutmeg, and cloves to a separate mixing bowl and whisk to combine.
- Add 1/2 of the dry ingredients to the bowl of wet ingredients and beat just until combined.
- Beat in 1/2 of the buttermilk. Add the remaining flour mixture to the mix and beat in until just combined. Then, beat in the remaining buttermilk just until a smooth batter forms.
- Let the batter rest for 5 minutes.
- Spoon the batter into the prepared loaf pan, mounding the batter higher in the center.
- Bake the loaf in the preheated oven for 45-50 minutes, or until cracked on top and cooked through.
- Remove from oven and let cool completely before removing from the pan.
- Place the loaf on a wire rack and dust with powdered sugar.
- Slice and serve. Store in an airtight container.
