Ingredients
- 4 packets Kodiak Berries & Cream Peak Oatmeal Packets
- 2 teaspoons baking powder
- 3 large eggs
- 1 cup milk
- 4 tablespoons butter, melted
- Zest of 1 lemon
- Juice of 1 lemon
Directions
- Preheat the oven to 350° F. Grease an 8x8” or 9x9” baking pan.
- Empty the oatmeal packets into a mixing bowl.
- Add the eggs, milk, melted butter, lemon zest and juice to the bowl and whisk together to form a batter. Let sit for five minutes so that the oats can absorb the liquid a bit.
- Transfer the batter to the prepared pan and bake for 15-17 minutes, or until cooked through and golden brown on top.
- Let cool slightly. Serve in bowls topped with milk, or as squares topped with whipped cream or yogurt.
- Store baked oats in an airtight container.
