Ingredients

  • 1 Box Kodiak Blueberry Lemon Muffin Mix
  • 1 cup Kodiak Classic Rolled Oats Canister
  • 1/2 cup melted butter
  • 1/4 cup honey
  • 1 teaspoon vanilla extract

 

For the filling:

  • 3 cups fresh or frozen blueberries
  • 2 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons cornstarch
  • 1/3 cup honey

Directions

  1. Preheat oven to 350° F. Line a 9”x13” baking dish with parchment paper.
  2. In a bowl, toss the blueberries with lemon juice, lemon zest, cornstarch, and honey. Set aside.
  3. In a large bowl, combine the entire box of Kodiak Muffin Mix, Kodiak Rolled Oats, melted butter, honey, and vanilla. Stir until crumbly.
  4. Press about 2/3 of the dough firmly into the bottom of the pan to form a crust.
  5. Spread the blueberry filling evenly over the crust.
  6. Sprinkle the remaining 1/3 dough loosely over the blueberries.
  7. Bake for 30-35 minutes until the top is golden brown and the berries are bubbling at the edges.
  8. Cool completely in the pan before slicing into bars.
