Ingredients
- 1 Box Kodiak Blueberry Lemon Muffin Mix
- 1 cup Kodiak Classic Rolled Oats Canister
- 1/2 cup melted butter
- 1/4 cup honey
- 1 teaspoon vanilla extract
For the filling:
- 3 cups fresh or frozen blueberries
- 2 tablespoon lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons cornstarch
- 1/3 cup honey
Directions
- Preheat oven to 350° F. Line a 9”x13” baking dish with parchment paper.
- In a bowl, toss the blueberries with lemon juice, lemon zest, cornstarch, and honey. Set aside.
- In a large bowl, combine the entire box of Kodiak Muffin Mix, Kodiak Rolled Oats, melted butter, honey, and vanilla. Stir until crumbly.
- Press about 2/3 of the dough firmly into the bottom of the pan to form a crust.
- Spread the blueberry filling evenly over the crust.
- Sprinkle the remaining 1/3 dough loosely over the blueberries.
- Bake for 30-35 minutes until the top is golden brown and the berries are bubbling at the edges.
- Cool completely in the pan before slicing into bars.
