Ingredients
- 1/3 cup Kodiak Blueberry Power Cakes Flapjack & Waffle Mix
- 1/4 cup milk of choice
- 1 egg
- 1/2 cup plain greek yogurt
- 1 teaspoon lemon zest (about 1 small lemon)
- 1 tablespoon fresh lemon juice
- 1/2 cup fresh blueberries
Toppings:
- Greek yogurt
- Blueberries
Directions
- In a medium bowl, mix together the Kodiak mix, milk, egg, Greek yogurt, lemon zest, and lemon juice until smooth.
- Gently fold in the blueberries.
- Scoop about 1/4 cup of batter onto a greased, preheated skillet.
- Cook until bubbles form on the surface, then flip and cook through.
