Ingredients

  • 4 Kodiak Buttermilk & Vanilla Power Waffles
  • 14 oz can sweetened condensed milk
  • 2 cups heavy whipping cream, divided 
  • 1/3 cup lemon juice
  • Zest of 1 lemon
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup fresh blueberries
  • Mint sprigs, to garnish 

Directions

  1. Toast the waffles to golden brown and let cool. Cut into bite sized pieces and set aside.
  2. Place the sweetened condensed milk in a mixing bowl and whisk in 1 cup of the heavy whipping cream. Add the lemon juice and lemon zest and whisk - the mixture should begin to thicken quickly. When it has a smooth, pudding-like consistency, set aside.
  3. Place the remaining cup of heavy whipping cream in another bowl with the 2 tablespoons sugar and the vanilla extract. Beat with an electric mixer until it forms stiff peaks.
  4. Layer the waffle pieces, lemon pudding, whipped cream, and fresh blueberries, dividing between 4 individual glass containers (about a cup in volume). You should be able to layer each ingredient 2 times per container.
  5. Top each trifle with blueberries and a sprig of mint.
  6. Serve immediately or cover and store in the refrigerator for up to 3 days.
