Ingredients
- 1 box Kodiak Blueberry Muffin Mix
- 2 eggs
- 3/4 cup Greek yogurt
- 1/4 cup milk of choice
- 1 cup fresh (or frozen) mixed berries
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350°F. Line a muffin tin with paper liners.
- In a bowl, whisk together the eggs, Greek yogurt, milk, maple syrup, and vanilla until smooth.
- Add the Kodiak mix and gently stir until just combined.
- Fold in the fresh berries gently. If using strawberries, chop them into small pieces first.
- Scoop the batter evenly into the prepared muffin tin (12).
- Bake for 14-19 minutes, or until a toothpick comes out clean and the tops are lightly golden.
- Let cool for a few minutes before serving.
