Ingredients

  • 1 box Kodiak Blueberry Muffin Mix
  • 2 eggs
  • 3/4 cup Greek yogurt
  • 1/4 cup milk of choice
  • 1 cup fresh (or frozen) mixed berries
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350°F. Line a muffin tin with paper liners.
  2. In a bowl, whisk together the eggs, Greek yogurt, milk, maple syrup, and vanilla until smooth.
  3. Add the Kodiak mix and gently stir until just combined.
  4. Fold in the fresh berries gently. If using strawberries, chop them into small pieces first.
  5. Scoop the batter evenly into the prepared muffin tin (12).
  6. Bake for 14-19 minutes, or until a toothpick comes out clean and the tops are lightly golden.
  7. Let cool for a few minutes before serving.
