Ingredients
- 1 cup Kodiak Classic Rolled Oats Canister
- 1-1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- Pinch of salt
- 1 banana
- 2 eggs
- 1/2 cup cottage cheese
- 1 teaspoon vanilla
- 3 tablespoons milk
Optional Toppings:
- Fresh berries
- Butter
- Maple Syrup
Directions
- Add the Kodiak oats, baking powder, cinnamon, and salt to a blender. Mix until it resembles a coarse flour. Pour into a bowl and set aside.
- Add the banana, eggs, cottage cheese, vanilla, and milk to the same blender. Blend until smooth.
- Add the dry ingredients back into the blender and mix until combined.
- Preheat a skillet or griddle to medium-high heat. Grease when ready to start cooking.
- Scoop about 1/4 cup of batter at a time onto the skillet and cook until bubbles start to form on top before flipping. Repeat with the remainder of the batter.
- Add your favorite toppings and enjoy!
