Ingredients
Donuts:
- 1 cup buttermilk
- 1 egg
- 1/2 cup pumpkin puree
- 1/4 cup unsalted butter (melted)
- 2-1/2 to 3 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 1/2 cup brown sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 pinch salt
Glaze:
- 4 tablespoons salted butter (melted)
- 1/3 cup maple syrup
- 1 cup powdered sugar
- 1 teaspoon vanilla
Directions
- In a large Dutch Oven or fryer, heat oil over medium heat until the oil reaches 350° F.
- Line a large plate with napkins or paper towels to soak up excess oil and set aside.
- In a large bowl, mix all wet ingredients with the brown sugar until combined.
- Add Kodiak Power cakes, pumpkin spice, cinnamon, and salt, and mix until the dry ingredients are fully incorporated. Set aside.
- In a small bowl, combine all ingredients to make glaze.
- When the oil reaches 350° F, take a cookie dough scoop, dip in oil, and shake it off. Scoop out dough balls and drop into the heated oil. Fry each dough ball for about 2-3 minutes on each side or until golden. Cook about 5-6 at a time depending on how big your pot is. Repeat process with the remainder of the batter.
- When donut holes are done cooking, place onto prepared cooling plate. After the donuts have cooled, coat with about 1/2 tablespoon of glaze and place 2 chocolate chips on each to make eyes and place onto cooling rack.
