Ingredients
- 1 cup Kodiak Pumpkin Power Cakes Flapjack & Waffle Mix
- 1 teaspoon pumpkin spice
- 1/2 cup pumpkin purée
- 1/3 cup maple syrup
- 1/4 cup almond butter
- 1/3 cup walnuts
Glaze (optional)
- 1/2 cup confectioners sugar
- 1-2 tablespoons vanilla extract
- 1/2 cup milk of choice
Directions
- Preheat oven to 350° F.
- In a bowl, whisk together Kodiak mix and pumpkin spice. Set aside.
- In a separate bowl, mix pumpkin puree, maple syrup and almond butter until smooth.
- Add the wet ingredients to the dry ingredients, stirring to fully combine.
- Gently fold in the walnuts.
- Roll dough into 1-inch balls and place on a parchment-lined baking sheet.
- Bake for 15-20 minutes, or until set and lightly golden on the bottom.
- Let cool slightly before digging in. Enjoy!
