S’mores Dip

Ingredients

  • 1 cup semi-sweet chocolate chips 
  • 1/3 cup heavy cream
  • 1 container (16 oz) cottage cheese 
  • 1 cup marshmallow cream
  • 1 cup mini marshmallows
  • 1 recipe Kodiak Graham Crackers (excluded from nutritionals)

Directions

  1. Place the chocolate chips and cream in a microwave safe bowl. Microwave on high for 45 seconds, or until cream is steaming.
  2. Whisk the hot cream and chocolate chips together until smooth and glossy. Set aside to cool for a few minutes.
  3. Place the cottage cheese, marshmallow cream, and the chocolate mixture into a high-speed blender and process until smooth, scraping down the sides as needed. Set aside.
  4. Preheat the broiler.
  5. Place the mini marshmallows on a baking sheet and spread out in one layer.
  6. Place the marshmallows under the broiler, leaving the oven door open. Watch closely and remove as soon as the marshmallows begin to brown and bubble slightly.
  7. Place the toasted mini marshmallows on top of the dip and serve chilled alongside a recipe of Kodiak Graham Crackers for dipping.
