Ingredients

  • 1/2 cup Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 4 eggs 
  • 3/4 cup whole milk 
  • 4 tablespoons butter
  • 4 slices prosciutto 
  • 1 cup cherry tomatoes, halved 
  • 3 tablespoons pesto 
  • 1/4 cup red onion, sliced
  • 1/4 cup parmesan cheese, shaved 

Directions

  1. Preheat the oven to 425° Fahrenheit. 
  2. Place the Kodiak mix, eggs, and milk in a blender and process until smooth.
  3. Add the butter to a 9” cast iron skillet and place in the oven. 
  4. When the butter is melted and bubbling, remove the pan from the oven and quickly pour in the batter. Working fast, lay the prosciutto slices on top of the batter and place the skillet back in the oven.
  5. Bake for 18-20 minutes or until golden brown and puffed.
  6. While the pancake is baking, add the tomatoes, pesto, and sliced onion to a bowl and toss. Set aside.
  7. Remove the pancake from the oven.
  8. Top the pancake with the tomato salad and sprinkle with the shaved Parmesan. Serve in slices.
