Ingredients

  • 1 box Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 1-1/2 teaspoons garlic powder 
  • 1 tablespoon dried oregano 
  • 2-1/4 cups Good Culture low-fat cottage cheese, divided 
  • 2 whole eggs
  • 6 egg whites
  • 1-1/2 cups nonfat milk 
  • 2 tablespoons chives, chopped 

Directions

  1. Preheat the oven to 350°F. Line a 9 x 13 baking pan with parchment paper or grease.
  2. Whisk the Kodiak mix, garlic powder, and oregano together in a large mixing bowl and set aside.
  3. Add 1 cup of the cottage cheese to a blender, along with the eggs, egg whites, and milk. Process until smooth.
  4. Pour the mixture into the bowl of dry ingredients and whisk together to form a thick batter. Add the remaining 1-1/4 cups of cottage cheese to the batter and fold in, along with the chives, until mixed in well.
  5. Scrape the batter into the prepared baking pan and bake for 35 to 40 minutes, or until golden brown on top and cooked through.
  6. Let cool completely. Lift the bread out of the pan by lifting the parchment paper and place on a cutting board. Slice into 15 squares. Enjoy!
  7. Store leftovers in an airtight container.
