Ingredients
- 1 box Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 1-1/2 teaspoons garlic powder
- 1 tablespoon dried oregano
- 2-1/4 cups Good Culture low-fat cottage cheese, divided
- 2 whole eggs
- 6 egg whites
- 1-1/2 cups nonfat milk
- 2 tablespoons chives, chopped
Directions
- Preheat the oven to 350°F. Line a 9 x 13 baking pan with parchment paper or grease.
- Whisk the Kodiak mix, garlic powder, and oregano together in a large mixing bowl and set aside.
- Add 1 cup of the cottage cheese to a blender, along with the eggs, egg whites, and milk. Process until smooth.
- Pour the mixture into the bowl of dry ingredients and whisk together to form a thick batter. Add the remaining 1-1/4 cups of cottage cheese to the batter and fold in, along with the chives, until mixed in well.
- Scrape the batter into the prepared baking pan and bake for 35 to 40 minutes, or until golden brown on top and cooked through.
- Let cool completely. Lift the bread out of the pan by lifting the parchment paper and place on a cutting board. Slice into 15 squares. Enjoy!
