Ingredients
- 1 Kodiak Maple & Brown Sugar Oatmeal Cup
- 2 tablespoons Kodiak Buttermilk Power Cakes
- 1/4 teaspoon baking powder
- 1 egg
- 1 tablespoon avocado oil
- 5 tablespoons milk
- 1 tablespoon pecans, chopped (reserve a few to top muffin)
- 1 teaspoon butter, melted
- 1 teaspoon maple syrup
- 2 tablespoons powdered sugar
Directions
- Remove the lid from the oatmeal cup.
- Add the power cakes mix and baking powder to the cup and stir with a fork to combine.
- Add the egg, oil, and 2 tablespoons of the milk to the cup and stir until a smooth batter forms.
- Add the remaining 3 tablespoons of milk and stir until fully combined. Let sit for 5 minutes.
- Stir again and sprinkle the top with chopped pecans. Microwave for 90 seconds.
- Let cool slightly. Make maple butter glaze:
- Place the melted butter, maple syrup, and powdered sugar in a small bowl and whisk together until a smooth icing forms.
- Drizzle the glaze over the top of the muffin and sprinkle with a few pecan pieces. Enjoy!
