Ingredients

  • 6 Kodiak Protein Flatbread rounds, rolled very thin
  • 1-1/2 pounds ground beef
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 6 slices sharp cheddar cheese
  • 2 cups shredded iceberg lettuce
  • 3/4 cup sliced dill pickles

 

Burger Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 2 tablespoons dill pickle relish
  • 1 teaspoon hot sauce (optional)
     

Directions

  1. Prepare the burger sauce by whisking together the mayonnaise, ketchup, mustard, relish, and hot sauce in a small bowl. Refrigerate until ready to use.
  2. Divide the ground beef into 6 equal portions and roll into balls. Place one beef ball in the center of each cooked flatbread round. Press the beef into a thin, even layer that reaches nearly to the edges of the flatbread. Season with the salt and pepper.
  3. Heat a large griddle or cast-iron skillet over medium-high heat.
  4. Place the flatbreads beef-side down onto the hot griddle. Place a ramekin, burger press, or small heavy bowl on top of each flatbread to maintain firm contact with the cooking surface.
  5. Cook for 3-4 minutes, or until the beef develops a deep brown crust around the edges and is cooked through.
  6. Flip each taco so the flatbread side is now against the griddle. Top the beef with a slice of cheddar cheese and cook for 30 seconds to 1 minute, until the flatbread is lightly toasted and the cheese has melted.
  7. Remove from the griddle. Top with shredded lettuce, dill pickles, and burger sauce.
  8. Fold in half like a taco and serve immediately.
