This Strawberry Jelly Roll recipe transforms this classic summer dessert to a healthy treat. Simply combine Kodiak Cakes Buttermilk Power Cakes with eggs and stevia to create a light, fluffy cake that's protein-packed and contains whole grains.


  • 3 large whole eggs
  • 2/3 cup strawberry preserves or jelly
  • 3/4 cup Kodiak Cakes Buttermilk Power Cakes Flapjack & Waffle Mix
  • 1/2 teaspoon baking powder
  • 3/4 cup stevia baking blend or sweetener of choice
  • 1/4 cup of powdered sugar
  • 1/4 teaspoon salt
  • 1/3 cup milk of choice
  • 1 teaspoon vanilla extract


  1. Preheat oven to 375 degrees F. and line 15 x 10 x 1 inch pan with parchment paper. Generously grease paper with non-stick spray or butter
  2. In a medium bowl or stand mixer, beat eggs hon high speed for about 5 minutes or until very thick and lemon colored. Gradually beat in stevia/sugar. Beat in milk and vanilla on a low speed. Slowly add Kodiak Cakes mix, baking powder and salt. Beat until smooth. Pour into prepared pan and spread completely to corners
  3. Bake for 12-15 minutes or until toothpick inserted in center comes out clean. Immediately loosen cake from sides of pan and turn upside down onto large kitchen towel generously sprinkled with powdered sugar. Carefully remove parchment paper. While cake is hot, carefully roll cake and towel from the narrow end. Let cool on cooling rack for at least 30 minutes.
  4. When cake is completely cooled, unroll and remove towel. Spread jelly over cake. Roll up the cake and sprinkle with powdered sugar
