Ingredients
- 4 Kodiak Buttermilk & Vanilla Power Waffles
- 1 tablespoon olive oil
- 1 small zucchini, cut into 1” pieces
- 1 ear corn, kernels cut from cob
- 1/2 teaspoon smoked paprika
- 1/2 cup cherry tomatoes, halved
- 2 green onions, sliced
- 1 cup frozen peas(defrosted)
- 1 garlic clove
- 1/4 cup cilantro
- 2 limes, one cut into 4 wedges
- 1/4 cup plain yogurt
Directions
- Place the peas, garlic, cilantro, and the juice of one lime in a food processor. Pulse until blended into a thick paste. Add salt to taste. Pulse again and set aside.
- Add the olive oil to a large skillet and heat to medium/high. Add the zucchini, corn, and smoked paprika to the skillet and sauté until golden and soft. Remove from the heat and toss in the cherry tomatoes and green onion. Add salt to taste.
- Toast the waffles according to package directions.
- Top each waffle with 1/4 cup of the pea mixture and 1/4 of the vegetable mixture. Repeat with remaining waffles.
- Serve each waffle tostada with a tablespoon of yogurt and a lime wedge.
