Ingredients
Crust:
- 1-1/2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 1/2 cup butter
- 1/4 cup ice water
Filling:
- 2 cups ricotta cheese
- 3 eggs
- 1/4 cup milk
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Topping:
- 1 tablespoon olive oil
- 1 bunch asparagus
- 1/2 teaspoon salt
- 1 bunch radishes, cut in half
- 1/2 cup watercress or arugula
Directions
- Add Kodiak mix to a large bowl. Cut the butter into cubes and work into the mix by hand. Add ice water. Mix until a dough is formed. Flatten the dough into a disc and refrigerate for 1 hour.
- Meanwhile, whisk the ricotta, eggs, milk, salt, and pepper together in a large bowl.
- Preheat oven to 375 degrees. Coat the asparagus and radishes with olive oil and salt. Place on a baking pan and roast for 15-20 minutes.
- On a floured surface, roll the disc of pie dough 1/4" thick and place into a tart pan.
- Fill with prepared ricotta filling and bake for 25-30 minutes. Remove from oven and let cool slightly before topping with roasted vegetables and watercress or arugula.
