Topped with fresh, cool yogurt and crisp, tart berries, this pie comes together for a wildly delicious, better-for-you treat. Use Kodiak’s protein-packed Honey Oat Granola that is a great source of fiber for some wholesome nutrition when big days lie beyond the horizon.

Ingredients
- 1 cup medjool dates, not packed, pits removed
- 1/4 cup boiling water
- 1 bag Kodiak Honey Oat Granola
- 24 ounces plain Greek yogurt (the thicker the better)
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup fresh berries (any assortment - slice strawberries if using)
Directions
- Place the dates in a cup and pour the hot water over them. Let sit for 10 minutes.
- Measure out 1/4 cup of granola and set aside for garnish.
- Place the rest of the contents of the bag of granola. In a food processor. At the soaked dates, reserving any remaining water in the cup. Process for 1-2 minutes or until broken down into small crumbles. Let sit for five minutes so that the granola can absorb some of the moisture.
- Process again, adding in as much remaining date water as needed for the mixture to come together in a firm but sticky dough. Dough should hold together easily when pinched.
- Press the dough into an even layer covering the bottom sides of a standard pie dish. Cover and refrigerate for 2 hours.
- Place the yogurt, maple syrup, and vanilla in a large mixing bowl. Whisk together until smooth.
- Spoon the mixture into the granola crust and smooth to level. Top with assorted berries and reserved granola.
- Serve in chilled slices. Best eaten the same day made.
