Ingredients
- 3/4 cup + 2 tablespoons whole milk
- 8 tablespoons butter, divided
- 2-1/4 teaspoons instant yeast
- 2-1/4 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 1 packet Kodiak Apple Cinnamon Oatmeal Packets
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 egg, room temperature
- 1/3 cup brown sugar, packed
- 1 tablespoon cinnamon
- 1 large apple, peeled and diced into small pieces
- 4 ounces cream cheese, softened
- 2/3 cup powdered sugar
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
Directions
- Place the power cakes mix, contents of the oatmeal packet. sugar, and salt in a mixing bowl fitted to a stand mixer and set aside.
- Place the milk and 3 tablespoons of the butter in a small saucepan and heat just until the butter starts to melt. Remove from heat, stirring occasionally until butter melts fully and let cool until warm (no longer hot to the touch). Add the yeast and whisk until dissolved.
- Pour the milk mixture into the bowl of dry ingredients, add the egg, and stir to combine. Beat with the whisk attachment for 5 minutes, to form a smooth, somewhat sticky dough.
- Cover and let rest for 10 minutes while you make the filling.
- Place 3 tablespoons of softened butter, the brown sugar, and the cinnamon in a small bowl. Stir until a smooth mixture forms. Set aside.
- Dust your work surface with flour and press or roll the rested dough out into a 14” x 8” rectangle.
- Spread the filling evenly over the dough. Sprinkle the chopped apple pieces evenly over the cinnamon filling. Roll the dough into a 14” long log. Use floss or a sharp knife to cut the log into 10 cinnamon rolls.
- Place the cinnamon rolls in a greased 8-9” skillet. Cover and let rise until almost doubled in size.
- Preheat the oven to 350° F. Bake the rolls for 23-25 minutes, or until golden brown and cooked through.
- While the rolls are cooking, make the icing. Place the last 2 tablespoons of butter in a mixing bowl along with the cream cheese, vanilla, cinnamon, and powdered sugar. Beat until a smooth icing is formed.
- Spread the icing over the top of the cinnamon rolls once cooled. Store in an airtight container.
